Description
The team at Cape Byron Distillery have been patiently waiting whilst their whisky has been maturing, where humid subtropical rainforest air meets the cool sea breeze, in the Byron Bay hinterland. Collaboratively fermented with local brewers to get the perfect wash, double distilled in copper pot-stills and aged in ex-Bourbon barrels, this whisky is beautifully balanced and expressive of the local terroir.
