The fruit for the Ephemera Nero d’Avola 2020 vintage was sourced from the Chalmers vineyard in Northern Heathcote. The site is east facing and practices organic viticulture. Produced with 65% whole bunch and 3 weeks maceration with no plunging or pumping. the wine then rested for 6 months in old large format oak, before being sulphured once, and bottled without fining or filtration.
