Paying tribute to the late mother of the head distiller, this gin incorporates three varieties of roses: the rare Wild Rose from the Wicklow mountains, large Heritage Roses, and prized Damask Roses. The distillation method involves carefully vapour distilling these meticulously cultivated flowers alongside wild plants harvested from the surrounding mountains.
