
Description
Established in 2018 by husband and wife team Nick and Ally, Karu Distillery is situated in the Devils Wilderness, NSW. Their range includes gin, vodka, and rum. Outcask rum is fermented from molasses, distilled in a 600L copper pot still called Calcifer, and aged in ex-Australian whiskey barrels for 2.5 to 3 years. A solera system is used for blending the barrels post-maturation to ensure consistency.
