A Masterpiece of Winemaking
At the heart of Pernelles craftsmanship lies the Méthode Moderne, a unique approach that marries time-honoured techniques with contemporary innovation. This process begins with a classic blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes. A portion of the blend is aged for a minimum of three years on lees, imparting depth and complexity. The de-alcoholisation is performed gently in a single pass, preserving the integrity and character of the sparkling.
