Following a typically wet and windy spring in 2021, the season unfolded with periods of milder temperatures, which delayed shoot growth and flowering dates. However, the sunny conditions in early to mid-November allowed the vines to surge in growth, leading to a rapid flowering period. Warm conditions throughout January and February, complemented by the cooling influence of the sea breeze, allowed the fruit to ripen perfectly. Harvest commenced with Pinot Noir on February 4, followed by all white varieties by March 15. This vintage is a masterful blend of precision and elegance. Hand-harvested fruit was destemmed, chilled, and combined with whole bunch pressed parcels, before being barrel fermented in new French oak barriques. The wine spent 11 months in barrels, where regular lees stirring enhanced the complexity and texture.
