As the largest landholder, and the only certified-organic grower, in Cote de Lechet, Didier Defaix has an intimate grasp of its mineral core and sunlit fruit. The 2023 vintage channels both, weaving the site’s signature saline precision with an extra thread of ripeness from the year’s warm conditions. A quarter of the wine ferments in seasoned oak once used for the domaine’s old-vine cuvee, lending subtle breadth to the chiselled frame.
