Grapes are harvested at optimal maturity, rigorously sorted in the vineyard and at the winery, then fully destemmed prior to fermentation. Controlled maceration and skin contact ensure elegant extraction, followed by elevage in which about one third of the wine matures in 228‑litre barrels while the remainder rests in vats. Total elevage lasts approximately 18 months, with additional cellar rest before release.
