Perched on a 38% incline above the village of Milly and fully exposed to the southeast sun, this 1-hectare vineyard produces just 3,460 bottles of intensely focused Premier Cru each vintage. The stony, nutrient-poor soils force the 32-year-old vines to dig deep, translating to a wine of great cut and precision. Fermented with indigenous yeasts and aged for two years in stainless steel, it’s bottled with no oak influence—letting the character of the site speak unfiltered and loud. Florals, citrus, and flint dominate, carried by vibrant acidity and classic Chablis chalkiness. Maker Domaine Jean Dauvissat is a family-owned estate that has been producing exceptional wines since the 1950s. Founded by Alphonse Dauvissat, the estate is now run by Fabien Dauvissat, who joined the domaine in 2009 and has since focused on elevating their winemaking practices. The estate spans over 23 hectares across seven communes in the Chablis region, including the prized Montmains vineyard.
