The 2023 Domaine Samuel Billaud Chablis 1er Cru Mont de Milieu is a layered, mineral-infused Chardonnay drawn from three parcels at the Chablis end of this esteemed right-bank vineyard. With old vines in two of the plots and low yields across the board, the wine shows both concentration and finesse. Fermented in stainless steel and aged partly in 600-litre oak for subtle texture, this is a more generous Premier Cru in Billaud’s line-up, with fine exotic fruit and dense, driving mouthfeel. Its salinity and white-fruited elegance are anchored by a mineral crunch and restrained oak, making it a compelling match for poached turbot, grilled lobster, or creamy shellfish pasta.
