Four Pillars Christmas Gin is the creation of Four Pillar’s head distiller, Cameron. This is his tribute to the four things he loves: Australia, Christmas, Gin and his late mum Wilma. Each year, Wilma would make Christmas puddings on Victoria Day while the rest of the family watched the races. So a couple of years ago, on Derby Day, Cam put some puds made to her recipe in the botanical basket of Wilma (Four Pillars’ still) and distilled a gin. Cam was also working on a gin aged in Four Pillars’ collection of 80-year-old muscat barrels. He decided to blend these together and add a tweak of classic Rutherglen Muscat. The result smells like Gin and tastes like Christmas. Sip straight over ice, simply mix with ginger ale or make a cracking Martinez.
