The Lark Single Malt Whisky Tokay Tokay Release was matured in 100L Tokay casks before finishing in two 300L Tokay hogsheads. The resulting whisky has notes of coffee liqueur, golden raisins, liquorice all sorts, roasted hazelnut sand a hint of garage grease. The smell of the dry Australian bush is everywhere. The palate starts bright and sunny with burnt butter, golden syrup, and Italian plums, followed by strong black coffee, sweetened with leatherwood honey. A mellow finish with ripe paw-paw and persimmon. The warm honey and coffee notes linger, blending seamlessly with a hint of Tassie highland peat.
