The Pepper Tree Merlot is aromatic on the nose of black and red fruits with spicy lift and subtle oak. A rich and supple palate packed with sweet berry fruits and spice. Well balanced by savoury oak and fine tannins, providing a long complex finish. Individual blocks machine harvested once flavour ripe and destemmed, sorted in the vineyard. The fruit is chilled at the winery and cold soaked for 4 days before being inoculated.
