Sullivans Cove Double Cask Whisky, currently running on Batch DC104, is made up of three French Oak ex-tawny casks between ten and eleven years old and four American oak ex-bourbon casks between eleven and thirteen years old. The nose is grain forward, with notes of baking rye bread with walnuts, woodworking shed, coconut and a hint of cocoa. The scent is followed by a wave of honey, beeswax and orange cake. The palate exhibits more honey, as well as a briny coastal note and canned peaches with syrup, a warm spice of almonds and oat biscuits bringing earthy balance. The finish has honey, orange peel and a tsunami of vanilla cream, then linger fruit to ponder at the end.
