Old & Rare American Oak ex-Bourbon Single Cask TD0207 was distilled in July 2007 and decanted in March 2024, maturing for 16 years and 7 months in a single 200L American oak ex-Bourbon cask. Bottled at 47.6%, this cask produced just 213 bottles. Sullivans Cove Second-Fill casks are a truly special part of the distillery. A selection of the best American Oak and French Oak barrels are refilled, resulting in whiskies with a gentler oak profile that lets the spirit shine. Philosophy: Distilled in Hobart, Tasmania, Sullivans Cove single malt whisky is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, the distillers aim to seek the sublime. Each cask is nurtured to its natural peak, with thousands of tiny decisions shaping each batch. No two batches are the same, making each one an opportunity for exploration. Tasmania’s clean water makes it an ideal place for producing world-class whisky, while the island’s fertile soil is perfect for barley growing. This combination of quality water and grain forms the foundation of Sullivans Cove’s high-end whisky. All Sullivans Cove whiskies are made from 100% Tasmanian malted barley, with the wash brewed by experienced local brewers. The whisky is double-distilled in a unique Tasmanian-built pot still, affectionately known as “Myrtle.” The first distillation, known as the “wash run,” produces low wines of about 20% ABV, which are then redistilled during the “spirit run” to create a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before being aged in casks. Most of the whiskies are aged in either 200L American oak ex-Bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years. Nose – Candied Lemon, Caramel Popcorn, Raspberry Jam Caramel popcorn and fudge add a playful touch. A bright timber note of Huon pine weaves through, alongside the softer orange and herbal tones of Aperitivo Cappelletti Palate – Rich Deep Berries, Velvety, Orange Blossom Sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.
