Lamella is the flagship Shiraz from Dan Standish, a sixth-generation Barossan and one of Australia’s most exacting winemakers. Sourced exclusively from the Angas family vineyard at Hutton Vale Farm in Eden Valley, the fruit comes from vines planted in the early 1960s using cuttings from the famed Mt Edelstone vineyard. This site, perched between Mt Edelstone and Hill of Grace, is one of the most prized in the country—and Lamella is its purest expression. Crafted entirely from whole bunches and fermented in small open oak vats, the 2021 vintage shows remarkable finesse and structure. Cool conditions delivered a wine of rare clarity and poise: jasmine tea, graphite, bergamot, and star anise float above layers of pomegranate, sage, and black tea. Each parcel is vinified separately, allowing Dan to make ruthless selections—up to 80% of fruit can be declassified—ensuring only the most compelling barrels are bottled. This is a wine of grand architecture and long cellaring potential. Best from 2027, but its dense core of black fruits, spice and fine-grained tannin will carry it through to 2043 with ease. Each vineyard parcel is fermented separately, and up to 80% of the blend may be discarded—only the most compelling barrels make the final cut. Together they favour whole-bunch ferments, wild yeasts, natural cork, and extended elevage in French oak (18–22 months).
