Sourced from vineyards in Tea Tree and Campania, it brings clarity and drive, with just enough residual sugar to balance its natural acidity. The fruit is hand-picked, destemmed and left on skins for eight hours before a wild ferment in tank. Fermentation is stopped at the precise moment where fruit weight, sugar and acid fall into line. This is a Riesling of energy and subtle structure, showing the poise and detail that define Stargazer’s work with southern Tasmanian fruit. Tasting Notes NOSE – Aromatic & precise Honeysuckle, apple skin, citrus zest and orchard fruit with hints of spice such as cardamom and nutmeg. PALATE – Taut & textural Lively citrus and orchard fruit framed by wild fennel and chamomile notes, with residual sugar balanced seamlessly by acidity and phenolic grip.
