As a widely planted grape in Australia, Chardonnay, represents around a quarter of the total grape harvest. Because of this, there is a large variety of locations and each location providing different sets of flavours. The diversity of Chardonnay expression shown in Australia is a large benefit to Australian produced sparkling wines. The complexity drawn from methode traditionnelle is on show in this exclusive release. Chardonnay grapes from the estate vineyards were picked between late February and mid-March. Several parcels of each block (and clone) were pressed and fermented separately to ensure the unique characteristics of each batch and diversity of fruit were retained. A very small proportion was fermented in small, seasoned oak barrels to give us further complexity. Each cuvee was then selected for its flavours, balanced structure and palate length – all essential for any Chandon vintage style. Following tirage and secondary fermentation, Chandon Vintage Blanc de Blancs 2017 spent more than 42 months ageing on yeast, an essential part of the methode traditionnelle process. Blanc de Blancs can only be made from white grapes, and is known for its elegance and finesse, this 2017 vintage delivers on that promise. Hailing from the Whitlands vineyard, 2017 was a cooler year which resulted in a sparkling which dances and energy despite considerable age. The nose is vibrant with lemon zest, grapefruit, apple blossom and charming minerality. On the palate, it is crisp and lively, with flavours of citrus and layers of hazlenut crumble and biscuit, sure to further develop in the coming months and years. Pair with sushi and sashimi. The clean and crisp nature of the wine matches well with the subtle flavours and textures of raw fish, while its acidity helps cut through the richness of the fish and soy sauce.
