Domaine Fabien Coche’s 2023 Pinot Noir comes from two mature parcels in Meursault and Pommard, sites that lend this regional wine more substance than its humble label suggests. With vines between 30 and 60 years old, the fruit carries both purity and quiet intensity. Fabien’s approach to this cuvee is restrained: 100% destemmed fruit, no pigeage or remontage, and gentle extraction to preserve perfume and freshness. Ageing takes place in larger barrels with just 20% new oak, before bottling ahead of the next harvest to capture vibrancy. The result is a lifted, aromatic red Burgundy, silky and fragrant yet with a subtle backbone that nods to its Pommard roots. Tasting Notes NOSE – Red fruit and spice Fresh cherry, raspberry and redcurrant with floral lift and a touch of pepper.
